If you’ve read my post on how much I cook with Big Bill at once, you probably thought “what sane person would do with that much baking at once?!”
Okay, maybe I’m not entirely sane… But I have a freezer full of goodies!
A freezer is great for keeping baked goods. Breads, cakes, muffins keep really well in the freezer. When you want to serve them, just microwave them for 20 seconds to 1 minute (depending on how much you are heating at once) or slowly reheat them in a oven at around 120 C. They will come out tasting pretty much like freshly baked!
Don’t ever keep bread, cakes and muffins in the fridge! Not even for a day! A fridge draws the moisture away and dries out bakings, all the while still allow mold to develop! So as soon as my bakings cooled, I freeze all those I’m not eating the next day. Just pop them into those handy zip-lock bags and they’ll happily hibernate in the freezer.
However, things like custard and quiche will lose their velvety texture once frozen. So eat these fast or share them. Dense cheese cake on the other hand does freeze well. Anyway, the rule of thumb is: things you can get from the supermarket’s freezer section, chuck them into the freezer!
