It’s a sweet yet healthy fix in less than 10 minutes! Yes, less than 10 minutes if you have a microwave! And I’m not talking about some horrific “microwave cake in a mug” type of thing, but a decent beautiful flan that is fitting for a fancy dinner! (At least my guests were surprised to hear it was made in a microwave!) For those who thinks microwaves are evil, feel free to bake it in an oven with or without a pastry base. The upside of baking in an oven is that you can make a larger one (just multiply the ingredients), because a microwave can only manage to evenly cook a flan roughly 15cm in diameter, and 2cm deep. Remember to use a microwave safe flan dish if you are using a microwave.
- 1 egg
- 100ml sweetened yogurt
- 80ml ground almonds
- enough soft fruit to loosely cover the base of your flan dish (I used mixed berries and some pineapples. You can also use cooked apples or pears etc.)
- optional almond flakes or other chopped nuts
Put fruits all over the base of your flan dish. Whisk egg, yogurt and ground almonds together and pour over fruits. Sprinkle almond flakes or other chopped nuts on top. Cook in a microwave oven for 6 minutes on medium. Check if it’s set in the middles (slight wobble but not runny). If not, heat for another minute and check again. Alternatively bake in an oven at 150 C for 20-30 minutes until just set. Serve warm or cold.
